ABSTRACT: This study aimed to optimize the ultrasound-assisted extraction (UAE) of total anthocyanins from two stages of ripening purple tomatoes (low and high) and to compare the optimized extraction with the conventional one. In the optimization of UAE, the studied variables were time (5 to 75 min), temperature (30 to 70 °C), and solid: liquid ratio (1:5 to 1:15 m/v). The optimal condition of the UAE process, for low-ripened purple tomatoes, occurs at a time of 75 min, temperature of 40 °C, and solid: liquid ratio of 1:15 m/v, predicting the content of 12.487 mg/100g. For high-ripened purple tomatoes, the optimal condition occurs at a time of 40 min, temperature of 50 °C, and solid: liquid ratio of 1:15 m/v, predicting the content of 8.802 mg/100 g. On validation of these optimized conditions, less than a 3% difference was reported between the predicted and experimental values (12.267 mg/100 g for low-ripened, and 8.894 mg/100 g for high-ripened purple tomatoes). When comparing the optimized UAE with the conventional extraction, it was observed that UAE increased (P < 0.05) the extraction of total anthocyanins content by 73% for low-ripened and by 54% for high-ripened purple tomatoes. Thus, the study indicated that the UAE is an efficient technology for recovering bioactive compounds from purple tomatoes.

RESUMO: Este estudo teve como objetivo otimizar a extração assistida por ultrassom (EAU) de antocianinas totais de dois estágios de maturação de tomates roxos (baixo e alto) e comparar a extração otimizada com a convencional. Na otimização da EAU, as variáveis estudadas foram tempo (5 a 75 min), temperatura (30 a 70 °C) e razão sólido:líquido (1:5 a 1:15 m/v). A condição otimizada da EAU, para tomates roxos em baixa maturação, ocorreu no tempo de 75 min, temperatura de 40 °C e razão sólido:líquido de 1:15 m/v, prevendo o teor de 12,487 mg/100 g. Para tomates roxos em alta maturação, a condição ideal ocorreu no tempo de 40 min, temperatura de 50 °C e razão sólido:líquido de 1:15 m/v, prevendo o teor de 8,802 mg/100 g. Na validação das condições otimizadas, foi encontrada uma diferença inferior a 3% entre os valores previstos e experimentais (12,267 mg/100g para baixa-maturação e 8,894 mg/100 g para alta-maturação). Ao comparar a EAU otimizada com a convencional, observou-se que a EAU aumentou (P < 0,05) a extração de antocianinas totais em 73% para tomates em baixa-maturação e 54% para tomates roxos em alta-maturação. Assim, o estudo indica que os EAU é uma tecnologia eficiente para a recuperação de antocianinas de tomates roxos.

RESUMO: O objetivo desta pesquisa foi avaliar a composição fenólica da polpa de Jussara dos Estados brasileiros de Minas Gerais (MG) e Espírito Santo (ES) usando HPLC-DAD-MS / MS. Dezessete antocianinas foram detectadas, dentre elas, derivadas de cianidina, pelargonidina e peonidina. Dentre os compostos fenólicos não antociânicos, foram identificados flavonóis (derivados de caempferol, quercetina e isorhamnetina), flavan-3-ols (catequina, epicatequina, procianidinas do tipo B e dímeros desconhecidos) e resveratrol em sua forma glicosilada. Catequina (32,41-60,56 mg 100g-1) e epicatequina (18,86-40,92 mg 100g-1) foram os principais flavan-3-óis presentes nas frutas. As amostras apresentaram pequenas concentrações de glicosídeos resveratrol (0,02-0,91 mg 100g-1). A metodologia analítica utilizada (HPLC-DAD-ESI-MS / MS) permitiu a identificação de novos compostos relatados presentes na composição da polpa de Jussara.

ABSTRACT: This research assessed the phenolic composition of Jussara pulp from the Brazilian states of Minas Gerais (MG) and Espírito Santo (ES) using HPLC-DAD-MS/MS. Seventeen anthocyanins were detected in fruits, derived from cyanidin, pelargonidin and peonidin. Among the non-anthocyanic phenolic compounds, flavonols (kaempferol, quercetin and isorhamnetin derivatives), flavan-3-ols (catechin, epicatechin, B-type procyanidins and unknown dimers) and resveratrol in its glycosylated form have been identified. Catechin (32.41-60.56 mg 100g-1) and epicatechin (18.86-40.92 mg 100g-1) were the main flavan-3-ols present in the fruits. The samples showed small concentrations of resveratrol glycosides (0.02-0.91 mg 100g-1). The analytical methodology used (HPLC-DAD-ESI-MS/MS) permitted the identification of newly reported compounds in this fruit.

RESUMO: Os efeitos da radiação gama e pasteurização na estabilidade das antocianinas e na capacidade antioxidante durante o armazenamento da polpa de jussara foram avaliados. A polpa de jussara foi dividida em diferentes tratamentos: controle (sem tratamento), polpa irradiada (2, 4, 6, 8 kGy) e pasteurizada polpa (92 ºC / 1 minuto). Os tratamentos foram armazenados a 4ºC por 60 dias. O extrato fenólico foi preparado com uma solução de metanol / água / ácido fórmico. As seguintes análises foram realizadas a cada 15 dias: teores de compostos fenólicos totais por Folin-Ciocauteau, cianidina 51 3-glicosídeo e cianidina-3-rutinisida por HPLC e capacidade antioxidante (ABTS e DPPH). Os fenólicos totais e as antocianinas diminuíram com o aumento da dose de irradiação e do tempo de armazenamento. A pasteurização não afetou a concentração fenólica imediatamente após o processamento. No entanto, os teores de TPC e cianidina-3-rutinisida foram reduzidos durante o armazenamento da polpa pasteurizada. Nenhuma amostra processada apresentou características semelhantes ao controle ao final do armazenamento.

ABSTRACT: The effects of gamma irradiation and pasteurization on the stability of anthocyanins and antioxidant capacity during storage of jussara pulp were investigated. Jussara pulp was divided into 6 portions: control (no treatment), irradiated pulp (2, 4, 6, 8 kGy) and pasteurized pulp (92 ºC/ 1 minute). Portions were stored at 4ºC for 60 days. The phenolic extract was prepared with a solution of methanol/water/formic acid. The following analyses were performed every 15 days: contents of total phenolic compounds by Folin-Ciocauteau, cyanidin-3-glycoside and cyanidin-3-rutiniside by HPLC and antioxidant capacity (ABTS and DPPH). Total phenolics and anthocyanins decreased with the increasing irradiation dose and storage time. Pasteurization did not affect the phenolic concentration immediately after processing. However, the contents of TPC and cyanidin-3-rutiniside were reduced during storage of the pasteurized pulp. No processed samples presented characteristics similar to the control at the end of storage.

Abstract The aim of this study is to investigate the application of ultrasound in the extraction of betanin from beets (Beta vulgaris) using Deep eutectic solvents (DES). The extraction process was optimized using response surface methodology. The time variable was found to be correlated with the extraction performance. Three DES (choline chloride: urea (CC:U), choline chloride: glycerol (CC:G), and choline chloride: citric acid (CC:Ac)) were studied. The concentration of betanin extracted with CC:U, CC:G, and CC:Ac was 41.27-67.51, 82.46-104.45, and 50.06-111.93 mg/100 g. The maximum betanin extraction of 111.193 mg/100 g was achieved with CC:Ac in 38 min using 44% DES in water in an ultrasonic bath. These results demonstrate that DESs are excellent solvents for the extraction of betanin with superior efficiency to conventional extraction solvents. Ultrasound significantly improved the efficiency of betanin extraction from beets. However, a higher betanin content in the extracts did not translate into greater active antioxidant capacity, which may be related to the synergistic effects of other compounds present in the beet extracts. This study is the first attempt to optimize the parameters for ultrasound extraction of betanin from B. vulgaris using eutectic solvents.

RESUMO: Frequentemente são encontradas na literatura comparações entre a qualidade nutricional dos alimentos orgânicos e convencionais in natura, no entanto, pouco se discute acerca dos processados. Assim sendo, o objetivo desse estudo foi comparar o teor nutricional dos processados de ambos os sistemas de produção utilizando uma revisão sistemática da literatura e meta-análise, associando a aspectos de manejo das matérias-primas e processamento. Para isso, buscou-se artigos científicos publicados entre 2010 e 2020 e os dados obtidos foram analisados utilizando o método da diferença média padronizada com ajuste de Hedges e modelo analítico aleatório. Trinta e sete artigos foram selecionados, e os alimentos analisados em tais estudos foram agrupados em cinco categorias: cárneos, lácteos, pescado, vinhos e sucos/polpas de frutas. Nos produtos de origem animal o foco comparativo evidenciado foi principalmente o do perfil de ácidos graxos, enquanto nos de origem vegetal foi o dos fitoquímicos. Em relação à comparação do teor de nutrientes, foi possível constatar a similaridade nos orgânicos e nos convencionais na maioria dos estudos, entretanto, diferenças pontuais foram verificadas (P < 0,05): orgânicos com mais proteínas (cárneos), ômega 3 (lácteos) e menos ácido linoleico (lácteos e pescado). Também, notaram-se diferenças no manejo das matérias-primas orgânicas e convencionais, e similaridade no processamento. Portanto, a escolha por alimentos processados orgânicos não deve ser feita exclusivamente baseada em aspectos nutricionais, tendo em vista que as diferenças nos teores dos nutrientes em relação aos convencionais são praticamente inexistentes.

ABSTRACT: Comparisons between the nutritional quality of organic and conventional fresh foods are frequently reported in the literature; however, discussion about processed foods is less frequent. Therefore, this study compared the nutritional content of processed products from both production systems using a systematic review of the literature and meta-analysis, regarding aspects of raw material management and processing. The study reviewed scientific articles published between 2010 and 2020 and the data obtained were analyzed using the standardized mean difference method with Hedges’ adjustment and a random analytical model. Thirty-seven articles were selected, and the foods analyzed in the studies were grouped into five categories: meat products, dairy products, caught fish, wines, and fruit juices/pulps. In products of animal origin, the comparative focus shown was mainly that of the fatty acid profile, while in those of vegetable origin it was that of phytochemicals. Related to the comparison of nutrient contents, it was possible to verify the similarities in organic and conventional products in most studies; however, specific differences were verified (P < 0.05): organics contained more proteins (meat), omega 3 (dairy), and less linoleic acid (dairy and caught fish). Also, there were differences in the management of organic and conventional raw materials, and similarities in processing. Therefore, the choice for organic processed foods should not be made exclusively based on nutritional aspects, considering that the differences in nutrient contents in relation to those of conventional products are practically nonexistent.

Abstract Several studies indicate that the consumer market considers the price of organic foods to be significantly high and attribute this fact as one of the main restrictive aspects for starting the consumption of organic foods or even increasing their frequency. Given this scenario, the present study is proposed as a way to confirm such a perception. Therefore, the purpose of the study is to evaluate if the price of organic is higher than conventional in the market of ready-for-consumption juices and nectars, using samples collected in Brazil and France. For this, the hedonic price methodology was applied, using as variables the information described on ready-to-drink processed juices/nectars marketed in Brazil and France. The results of the study confirm that organic version is more expensive, with the price being approximately 50% higher in the Brazilian market, and 10% higher in France. Additional attributes, such as type of packaging, pulp content, and flavor, are also relevant for the price. This is believed to be the first study to evaluate the impact on price of the organic certification of ready-for-consumption juices and nectars in different consumer markets.

Resumo Embalagens inteligentes são aquelas que possuem maior aprimoramento em relação à comunicação e ao consumidor, uma vez que fornecem uma informação dinâmica sobre a qualidade real do produto. A presente revisão tem como objetivo analisar o conceito de embalagens inteligentes que utilizam como base polímeros incorporados com antocianinas para alteração colorimétrica, discutindo aspectos do desenvolvimento científico. Foi realizada uma análise crítica da produção científica que trata dos processos utilizados para o desenvolvimento dessas embalagens. O processo de produção está estruturado e controlado com base na demanda atual dos consumidores, uma vez que eles estão cada vez mais alertas em relação à segurança e à qualidade dos alimentos disponibilizados para consumo. Nesse sentido, o desenvolvimento de novas embalagens inteligentes com indicadores ou sensores colorimétricos está diretamente relacionado com a forma de produção, requerendo uma padronização de sua produção e parâmetros, fornecendo uma visão de diversos profissionais, que acabam por desenvolver novas tecnologias promissoras.

Abstract Intelligent packages are those that have significant improvement with respect to communication and to the consumer, since they provide dynamic feedback about the actual quality of the product.The present review aimed to analyze the concept of intelligent packaging that uses polymers incorporated with anthocyanins as a base for colorimetric alteration, as well as discussing aspects of scientific development. A critical analysis of the scientific production that deals with the processes used for the development of such packaging was performed. The production process is structured and controlled based on the current consumer demand, as they are increasingly alert to the safety and quality of the food available for consumption. In this sense, the development of new intelligent packaging with colorimetric indicators or sensors is directly related to the form of production, requiring a standardization of its production and parameters, thus providing insight from various professionals, who end up developing promising new technologies.

Abstract The food industry should have methods that allow identifying bioactive compounds quickly, efficiently and at low cost. The objective of this research was to obtain mathematical models for predicting the amount of total phenolics, anthocyanins and antioxidant capacity of blackberry, blueberry and jaboticaba skin, based on colorimetric parameters (L*, a*, b*, C* and h*). All analyses were done in the phenolic extracts obtained from these fruits. The mathematical models were obtained through multiple linear regression using the stepwise method. The significant correlation between the colorimetric parameters and chemical analyses resulted in models with a high predictive ability (high r2), such as in the determination of the contents of anthocyanins (r2 = 0.99), total phenolics (r2 = 0.86) and for the antioxidant capacity (r2 = 0.99). Thus, the prediction of levels of these bioactives compound, using colorimetric parameters, is very promising for cost and time savings.

Abstract The research aimed to evaluate the behavior of different concentrations of lutein added in sheep milk yogurt. The work verified the effect on acidity, pH, color, lutein degradation, and recovery during storage. Different added lutein concentration into yogurt were compared: 0.00 mg; 3.0 mg; 3.45 mg; and 3.9 mg (·100 mL-1). Analyzes were performed on days 1st, 15th, 30th, and 45th of refrigerated storage (5 °C). Lutein did not influence fermentation patters, but post acidification was observed, mainly in groups with the highest lutein concentrations. The amount of lutein recovered was different between groups (P < 0.05) due to treatment. Some differences (P < 0.05) in the same treatment occurred over time, tending to decrease lutein recovery. For all treatments, up to the end of storage, the final amount of lutein characterized the product as a nutritional source of this element. However, lutein recovery in G4 has reached the minimum daily intake recommended by researchers for health benefits. Recovery ranged from 81.9 ± 0.76·100-1 (w·w-1) to 76.31 ± 1.07·100-1 (w·w-1) on the storage period. L* has no difference (P > 0.05) between groups with different added lutein concentrations. In contrast, a*, b*, c*, and YI (yellowness index) were different (P < 0.05).

Abstract The objective of this study was to develop simple mathematical models for the prediction of the total anthocyanin content of fruits and vegetables, using colorimetry. Phenolic extracts of 13 species of fruits and vegetables were produced using 70% acidified ethanol and 70% ethanol. The quantification of the total anthocyanins of the extracts was performed by the spectrophotometric method, and the color characterization was done through the tristimulus colorimeter. The correlation between the L* value and the anthocyanin content was high (r = - 0.95) for extracts produced with 70% ethanol and diluted 20 times. Linear equations based on colorimetric coordinates, with R2 from 0.80 to 0.99, were obtained using 70% ethanol and 70% acidified ethanol as extraction solvent, with or without dilutions. Therefore, colorimetry, as a rapid method that does not involve the use of specific solvents, can be used to predict the total anthocyanin content of fruits and vegetables.

Abstract Synthetic colourants are widely used for colouring foods. However, their safety has been questioned. Due to this limitation and the global trend of consuming healthy foods, the industry is faced with the need to replace artificial colourings, which has given rise to a growing interest in colourants from natural sources. Thus, this work obtained the moisture adsorption isotherms of the natural food dyes of anthocyanins, betalains and curcumin and evaluated the humidity, water activity (aw), hygroscopicity, colour and antioxidant capacity in vitro. Isotherms were determined by the static gravimetric method with saturated salt solutions (LiCl. H2O, MgCl2.6H 2O, Mg(NO3)2.6H2O, NaCl, KCl and K2 SO4) at 25 °C. Experimental data were adjusted by GAB, BET, Halsey, Oswin and Henderson models. All models, except Henderson's for Curcumin, fitted the data and BET was used to represent the moisture adsorption isotherm. All the isotherms were type sigmoidal, characteristic of most foods. The observed water content (<0.3%) and a w (<0.03) can be considered favourable to stability. Colour analysis indicated a high colouring strength and the antioxidant capacity suggested that, in addition to representing a source of colour in food products, natural dyes may have an additional function, with possible health benefits.

Abstract The objective of this study was to develop, characterize and evaluate the stability of whey protein beverages containing anthocyanins from jabuticaba skins. Beverage formulations containing 0.5% (F1), 2.0% (F2), 4.0% (F3) and 6.0% (F4) of whey proteins and 2.0 mL of the concentrated phenolic extract from jabuticaba skins were developed. Physicochemical parameters (pH, acidity, total soluble solids, protein content, viscosity, color), antioxidant capacity, total anthocyanins and total phenols of the beverages were determined. In addition, a sensory acceptance test and a stability study were performed. The physicochemical analyses indicated that the protein concentration significantly (p < 0.05) affected the values of acidity, total soluble solids, total phenols and antioxidant capacity. The protein content also influenced the total color difference (ΔE) between formulations. The greater differences were observed in the formulation pairs containing low and high protein contents. The formulations F1, F2 and F3 were equally accepted on overall impression and color attributes. The stability study demonstrated that there was no significant change (p > 0.05) in the total anthocyanins and in the physicochemical properties of F3 over storage time, which indicated a good stability and a great market potential of the whey protein beverages containing anthocyanins from jabuticaba skins.

Abstract This study was aimed at optimizing the ultrasound-assisted extraction (UAE) of phenolic compounds from jussara and blueberry fruits using the response surface methodology (RSM). UAE was found to be more efficient to extract phenolic compounds from both fruits than the conventional extraction. The optimum extraction conditions for the jussara fruits were: extraction time between 30 and 62 min for total anthocyanins and total phenolics, fruit:solvent ratio of 10% and 6% (w/v) for total anthocyanins and total phenolics, respectively. The ethanol concentration was non-significant (p> 0.05). Acidified water was found to be an extracting solvent as efficient as ethanol in the extraction of phenolic compounds from jussara fruits. The optimum extraction conditions for blueberry anthocyanins were: ethanol concentration between 20-70% vol, and fruit: solvent ratio greater than 20% (w/v) within the range studied. The extraction time was not significant (p> 0.05). For total phenolic content: the concentration of ethanol was between 40-80%, and fruit: solvent ratio greater than 20% (w/v) and extraction time over 50 minutes. It was possible to adjust the mathematical model for the coordinates a* (verde vs vermelho) and C* (color saturation) of the jussara extracts.

RESUMO: O mercado de polpa de açaí ( Euterpe oleracea Mart.) congelada tem tido crescimento aceitável e apresenta grande potencial mercadológico em função da sazonalidade e do elevado nível nutricional do fruto. Porém, devido à inexistência de padrões para todos os tipos de frutas, encontram-se no mercado produtos sem uniformidade. O objetivo do presente estudo foi avaliar polpas de açaí congeladas de diferentes marcas comerciais, quanto às características químicas, físico-químicas e microbiológicas. Para ATT e pH, duas marcas do Pará e duas de Minas Gerais foram reprovadas, quando comparadas com a legislação vigente. Observou-se que K (1253,6mg 100g-1), Ca (312mg 100g-1), Mg (178mg 100g-1), e P (145mg 100g-1) foram os principais minerais encontrados nas amostras avaliadas. O Fe apresentou conteúdo médio entre 9,65mg 100g-1 e 22,66mg 100g-1. Quanto às características microbiológicas, as contagens para E.coli atenderam à legislação. As contagens de mesófilos aeróbios, fungos filamentosos e leveduras apresentaram variações nos resultados. A contagem de S. aureus coagulase positiva apresentou-se dentro dos padrões (102UFC g-1) e foi detectada a presença de Salmonella sp. em uma marca, dentre as seis avaliadas. As polpas de açaí analisadas apresentaram valores de fenólicos totais variando de 240,14mg AGE 100g-1 a 372,43mg AGE 100g-1 e os níveis de antocianinas totais variando de 12,05 a 24,98mg 100g-1. Os resultados físico-químicos e microbiológicos obtidos indicaram a necessidade de implementação imediata das Boas Práticas de Fabricação; em contrapartida, as polpas congeladas de açaí apresentaram considerável potencial antioxidante.

ABSTRACT: The frozen açaí ( Euterpe oleracea Mart.) pulp market has had acceptable development and presents great market potential due to its high nutritional level and fruit's seasonality. However, due to the lack of standards for all types of fruit, products without uniformity are in the market. This study aimed to evaluate frozen açaí pulp belonging to different trademarks related to chemical, physicochemical, and microbiological characteristics. Regarding the total titratable acidity (TTA) and pH, two trademarks from Pará and two from Minas Gerais were rejected compared with the current legislation. It was observed that K (1,253.6mg 100 g-1), Ca (312mg 100g-1), Mg (178mg 100g-1), and P (145mg 100g-1) were the main minerals reported in the analyzed samples. Fe showed an average content from 9.65mg 100g-1 to 22.66mg 100g-1. As for microbiological characteristics, the counts for E. coli were in compliance with legislation. Counts of mesophilic aerobic, filamentous fungi, and yeasts showed variations in the results. The count of coagulase-positive S. aureus met the standards [102 Colony Forming Units (CFU) g-1]; and presence of Salmonella sp. in a trademark was detected among the six evaluated trademarks. The analyzed pulp of açaí showed total phenolics values ranging from 240.14mg AGE 100g-1 to 372.43mg AGE 100g-1, and anthocyanin total levels ranging from 12.05 to 24.98mg 100g-1. The obtained physicochemical and microbiological results indicated the need for immediate implementation of Good Manufacturing Practices; conversely, the frozen pulp of açaí showed considerable antioxidant potential.

RESUMO: Este estudo teve como objetivo desenvolver e caracterizar bebidas formuladas com proteínas de soro de leite adicionadas de luteína. Bebidas formuladas com 0,5 (F1), 2,0 (F2), 4,0 (F3) e 6,0% m/v (F4) de proteínas de soro caracterizadas fisico-quimicamente e microbiologicamente e, avaliadas sensorialmente. As análises físico-químicas indicaram que o teor de proteína alterou significativamente (P<0,05) os valores de acidez, sólidos solúveis e as coordenadas colorimétricas, foi possível ajustar modelos matemáticos para todas essas variáveis. As análises microbiológicas mostraram contaminação não significativa (P<0,05) durante o processamento que poderia comprometer a qualidade das bebidas. Os teores de carotenoides e a atividade antioxidante não variaram significativamente (P>0,05) com o aumento do teor de proteína. A formulação F2 apresentou a maior aceitação sensorial. As bebidas são uma alternativa promissora para o uso do soro de leite e aumentam o valor agregado do produto pela adição de luteína.

ABSTRACT: This study aimed to develop and characterize beverages formulated with whey protein and added lutein. Beverages formulated with 0.5 (F1), 2.0 (F2), 4.0 (F3) and 6.0% w/v (F4) whey protein were physicochemically and microbiologically characterized, and sensory evaluated. The physicochemical analyses indicated that the protein content significantly changed (P<0.05) the acidity values, soluble solids and the colorimetric coordinates, making possible to adjust mathematical models for all these variables. Microbiological analyses showed no significant contamination (P<0.05) during processing that would compromise drinks quality of the drinks. Carotenoid content and the antioxidant activity did not change significantly (p>0.05) with increased protein content. The F2 formulation showed the highest sensory acceptance. Beverages offer a promising alternative to whey use and enhance the value of the product by the addition of lutein.
